Avocado and Chickpea Salad
makes 4-6 servings
2 15oz Cans of chickpeas, drained and rinsed
2 Avocados, peeled and pit removed
2 Tablespoons lime juice
1/2 Onion
Fresh cilantro to taste
1 teaspoon taco seasoning
2 teaspoons guacamole seasoning
1 teaspoon Cholula sauce
1/2 teaspoon salt
Place all ingredients in a food processor and process to desired consistency. Use as a sandwich filling topped with spinach leaves in a bun. This is a great recipe for those warm days when you don't feel like heating up your house with the oven.
